Stuffed tomatoes & peppers with roquefort sauce (serves 2)

Create a creamy bechamel sauce. While still hot, add roquefort cheese to melt inside. The quantity depends on how strong a taste you prefer for your sauce. Pour over the vegetables.

Put in a bowl: 1 tablespoon of diced red pepper, 1 tablespoon of diced green pepper, 1 tablespoon of diced yellow pepper, 1 tablespoon of grated carrot, 1 tablespoon of fresh green onion, 100 ml of milk cream and 100 gr. of yogurt. Mix them all together and, if needed, add some salt. Pour over the vegetables.

Put in a bowl: 200 gr. strained Greek yogurt, 2 tablespoons of mayo, 1 diced fresh green onion, 2 diced radishes, 2 tablespoons of dill and some salt. Mix them all together well and serve.
